David Green after working in One, Two and Three Michelin Star restaurants in Europe before returning home to Australia as Executive Chef at the much lauded Lakehouse in Daylesford is excited to open his first restaurant.

Olivia, named for our Daughter, will offer an intimate and creative Fine Dining experience.

Join us in the Dining Room for our Tasting Menu with matched wines, celebrating fresh ingredients from Vietnam’s countryside farms, bountiful seas and tropical forests.

Or for that special celebration with friends and family we have the beautiful East Room catering to groups up to 16 people with a choice of food and wine styles.
