About our head chef

David Green, a talented chef with more than 20 years of experience, including 5 years working in Michelin Starred restaurants in the UK and upon returning to Australia, working for 12 years at the Two Hatted Lake House, the iconic boutique Hotel Retreat and Spa on the shores of the beautiful Lake Daylesford in Victoria.
During his years of work, he had the opportunity to work under Chef Michel Roux in London. Since then, David has learned two valuable lessons on how to preserve natural food combinations and maintain classic cooking methods. Since then, he has come up with countless ways of combining and processing to create unique flavors in a completely new way, bringing unexpected and interesting things for guests to enjoy, because, every single detail that will contribute to the whole experience, guests will remember you.
